Gobhi Recipes

Gobhi Recipes – Gobhi is the Hindi word for Cauliflower. I am obsessed with both cauliflower as well as Indian spices and flavors. The great thing about cauliflower is it is so full of fiber and very low in carbs. All of the Indian spices and very tasty as well as being anti-inflamatory. It is cold as Hell if you are living in my region but because of my Portuguese heritage I can eat soup year round and pretty much for every meal of the day including breakfast!

Ingredients~try to get everything organic and non GMO if you can. Make sure you also get BPA free lined cans.

2 large heads of organic cauliflower (broken down into pieces, stems and leaves discarded)
3 32 oz boxes of veggie broth (Make sure it is organic)
6 cups of water
1 full bulb of garlic minced
2 yellow onions chopped
1/4 of a cup of virgin coconut oil
5 carrots (you can put them in whole or chopped, I chopped mine because I like to saute them first before I put in wet ingredients)
1 head of celery (same as carrots)
1/4 of a cup of fresh minced ginger (peeled)
4 can of chick peas (garbanzo beans)
2 cans of lite coconut milk
2 tablespoons of garlic chili paste )found in the Asian food aisle) or Sriracha to taste…some like it hot some like it mild

~Spices and Herbs~

Salt and Pepper to taste
1/2 of a teaspoon of ground cloves
1/2 of a teaspoon of ground ginger
1 tablespoon of turmeric
1/2 of a teaspoon of ground mustard (dry)
1 tablespoon of Garam Masala
1 tablespoon on ground coriander seed
1/2 of a teaspoon of ground cardamon
1 tablespoon of paprika
2 tablespoons of cumin
1 head of fresh cilantro chopped

In a very large soup pot melt the coconut oil at medium-high heat then throw in the onions, celery,carrots,ginger and garlic. Let those ingredients soften and blend their flavors.Next add cauliflower pieces. Then add all the wet ingredients like water, broth and coconut milk and bring to a boil., make sure that the cauliflower has softened enough to be mashed or blended .Next add all spices and herbs. After that is all set get your hand blender and puree the soup. If you don’t have a hand blender this will suck donkey balls because you will have to allow the soup to cool then blend it in a blender…which takes forever. So what I am saying is invest in a hand blender you will use it all the time! After you puree the soup add chick peas and hot stuff. You want to chick peasto be whole. It adds a nice texture to the pureed soup. Do the hot stuff to your palate. I like a little spice but my fiancee does not so I keep it on the mild side.

I top mine off with some red pepper flakes and fresh cilantro

Serve immediately, also makes amazing leftovers and freezes well.
